A week of meal plans for your convenience. These aren't always my own recipes, as I love to try others out and maybe even tweak them for my own spin. But I aim to have fairly easy, family friendly meals. A downloadable + printable PDF of plans are available below as well as links to all recipes.
I signed up for Home Chef - I like to do this every once in awhile for a change up in meals, easy planning and because one of my favorites, Half Baked Harvest, has partnered with them! You can google the recipes or search it on homechef.com

Waffles - We love to buy the premade Kodiak Waffles in the frozen section. They offer a few different flavors but chocolate chip and the cinnamon vanilla are two of our favs!
Banana Pancakes
3 ripe or overripe bananas
5 eggs
1 tsp baking powder
1 cup oatmeal
Place all ingredients in a blender and blend until smooth. Let batter sit for a few minutes as the oatmeal will thicken the batter over time. Thin with any milk of your choice if it's too thick. We like to stir in chia seeds and mini chocolate chips.
*I'm gonna throw in some discard for funsies!
Banana Muffins - I make the muffin recipe on the back of the Kodiak pancake mixes, add in chia seeds & mini chocolate chips!
Instant Pot Hard Boiled Eggs - place eggs on trivet and pour in 1 cup of water. Cook on manual for 5 minutes with a quick release. Then immediately place in an ice bath. This cooks the yolk through, reduce time for a less "hard boiled" egg.
Air Fryer Potatoes - Chop potatoes and season with olive oil, garlic salt + pepper. Air fry at 400 for 15 minutes or until golden brown.
Air Fryer Broccoli - I will generously season chopped broccoli with avocado oil, garlic salt + pepper and air roast at 375 for about 8 minutes or until my desired liking, which is pretty done!
Air Fryer Brussel Sprouts - Toss in olive or avocado oil with garlic salt + pepper. Air fry at 400 degrees for 15 minutes or until desired doneness.
Jasmine Rice in the Instant Pot
2 cups jasmine rice
2 cups water
Spray your insert with oil, add in rice and water, stir & cook on manual for 4 minutes. Natural release for 10 minutes or more. Voila! The perfectly cooked white rice!
Cheesy Ramen - Cook ramen according to package directions, drain most of the water off, stir in the seasoning packet and then rip up a piece of american cheese and stir in. So gross but yet so good, haha. My kids LOVE this - their dad's creation.
French Toast
Few Days Old Bread - like brioche, sourdough, french bread...
Eggs
Milk or Heavy Cream
Vanilla
Cinnamon
Cinnamon Sugar
Syrup
Mix eggs with a splash of milk or cream, a good splash of vanilla and a heavy shake of cinnamon. Meanwhile heat your skillet over medium heat. Then put a pat of butter in and let it melt, meanwhile start dipping your bread in the egg mixture, turning and soaking in both sides. Then fry in butter for about 3-4 minutes per side until golden. Immediately sprinkle with cinnamon and sugar and drizzle with syrup and enjoy!
Egg Roll Bowl
1 lb sausage, ground beef, pork, chicken or turkey (any of these work)
1 1/2 bags of coleslaw mix
1 tbsp garlic minced
1 tbsp ginger paste or minced
1 tsp garlic salt
1/2 tsp pepper
1/4 cup soy sauce
drizzle sesame oil
chopped green onions
Brown your meat, halfway through add your garlic and ginger. Add in coleslaw mix and cook down. Add in your garlic salt, pepper and soy sauce and cook until cabbage has softened. Remove from heat and drizzle in sesame oil, mix in green onions. Serve over rice, brown rice, quinoa, rice noodles or eat plain for a low carb option!
Egg Drop Soup
3 tablespoons cornstarch
2 teaspoons toasted sesame oil
1/2 tsp minced garlic
1 tbsp grated ginger
â…› teaspoon ground white pepper
5 cups chicken stock
1 tablespoon rice wine vinegar
2 teaspoons reduced sodium soy sauce
4 eggs, lightly beaten
Heat sesame oil in a large stockpot or Dutch oven over medium heat.
Stir in garlic and ginger until fragrant, about 1 minute. Whisk in pepper,
chicken stock and cornstarch. Bring to a boil; reduce heat and simmer until broth thickens.
Stir in rice wine vinegar and soy sauce.
Gradually add eggs in a slow steady stream, stirring constantly. Cook until the eggs are set.
Sloppy Joe's
1 1/2 lbs hamburger
1 8 oz can tomato sauce
1 tsp worcestershire
1 tsp liquid smoke
2 squeeze ketchup
1 tbsp tomato paste
1/4 cup brown sugar
1 tsp garlic salt
1/2 tsp pepper
1/2 tsp kosher salt
1 1/2 tsp chili powder
1 tsp onion powder
1 tsp dry mustard
Brown hamburger and remove fat. Stir in garlic salt, salt + pepper, chili powder, onion powder, dry mustard. Then pour in tomato sauce, Worcestershire, liquid smoke, ketchup, tomato paste and brown sugar. Bring to a simmer for 20 minutes or cook on low in crockpot all day. I love to get brioche hamburger buns & fresh sliced provolone from the deli. Top one side of bun with provolone and toast in toaster oven or broil in oven until bread is lightly golden and cheese is melted! We love to eat with plain, wavy potato chips. Scoop up any insides that fall out with them - so good!
Movie Night Charcuterie Board - These are my kids' favorite. On the weekend we will do a snack and charcuterie board, living room picnic while watching a movie. I cut up a bunch of meat, cheese, fruits, veggies - add in crackers, pickles, dips, nuts. You can do anything you want! Just serve it on a board and let the kids pick - they LOVE it!
