Meal Plans for September 25 - October 1

A week of meal plans for your convenience. These aren't always my own recipes, as I love to try others out and maybe even tweak them for my own spin. But I aim to have fairly easy, family friendly meals. A downloadable + printable PDF of plans are available below as well as links to all recipes.


I signed up for Home Chef - I like to do this every once in awhile for a change up in meals, easy planning and because one of my favorites, Half Baked Harvest, has partnered with them!


It's my son's birthday week along with my wedding anniversary. So I am busy making treats for school, treats for his friend party and treats for his actual birthday... geesh. Birthdays are a lot of work, haha. Hoping to squeeze in dinner with my husband but keeping this week fairly easy!





Waffles - We love to buy the premade Kodiak Waffles in the frozen section. They offer a few different flavors but chocolate chip and the cinnamon vanilla are two of our favs!


Banana Pancakes

3 ripe or overripe bananas

5 eggs

1 tsp baking powder

1 cup oatmeal


Place all ingredients in a blender and blend until smooth. Let batter sit for a few minutes as the oatmeal will thicken the batter over time. Thin with any milk of your choice if it's too thick. We like to stir in chia seeds and mini chocolate chips.


*I'm gonna throw in some discard for funsies!


Banana Muffins - I make the muffin recipe on the back of the Kodiak pancake mixes, add in chia seeds & mini chocolate chips!


Instant Pot Hard Boiled Eggs - place eggs on trivet and pour in 1 cup of water. Cook on manual for 5 minutes with a quick release. Then immediately place in an ice bath. This cooks the yolk through, reduce time for a less "hard boiled" egg.


Air Fryer Potatoes - Chop potatoes and season with olive oil, garlic salt + pepper. Air fry at 400 for 15 minutes or until golden brown.


Air Fryer Broccoli - I will generously season chopped broccoli with avocado oil, garlic salt + pepper and air roast at 375 for about 8 minutes or until my desired liking, which is pretty done!


Air Fryer Brussel Sprouts - Toss in olive or avocado oil with garlic salt + pepper. Air fry at 400 degrees for 15 minutes or until desired doneness.


Jasmine Rice in the Instant Pot

2 cups jasmine rice

2 cups water


Spray your insert with oil, add in rice and water, stir & cook on manual for 4 minutes. Natural release for 10 minutes or more. Voila! The perfectly cooked white rice!


Cheesy Ramen - Cook ramen according to package directions, drain most of the water off, stir in the seasoning packet and then rip up a piece of american cheese and stir in. So gross but yet so good, haha. My kids LOVE this - their dad's creation.


Creamy Tomato Soup

  • 28 oz can petite diced tomatoes

  • 1 cup chicken broth

  • 1 tbsp butter or vegan butter

  • spoonful of sugar

  • pinch of baking soda

  • 1/2 tsp onion powder

  • 1 1/2 cups cream or can of coconut milk

Place tomatoes, chicken broth, butter, sugar, baking soda and onion powder in a pot and simmer on low for at least an hour. OR place in your slow cooker on low all afternoon. Use an immersion blender to blend your soup smooth, or leave chunks if you'd like. Stir in cream and season with salt & pepper.


Grilled Cheese - I am going to make grilled cheese on the sourdough focaccia I made over the weekend. I can hardly wait to eat it! Here's the link to the focaccia recipe I made. It's so easy and will definitely be made again and again! I used 75 grams active starter and sprinkled the top with some flaky, maldon salt. But feel free to switch it up anyway you want!

Baked Oatmeal


1 1/2 cups oats

1/2 cup milk

1 egg

3/4 tsp salt

1/2 cup sugar

1/2 cup butter, melted

1 tsp. baking powder

1 tsp. vanilla


Mix all ingredients together and pour into greased 4 greased ramekins or baking dishes. Sprinkle the tops with brown sugar and cinnamon and baked at 375 degrees for 30 minutes. You can also add chopped nuts to the top before baking for an added crunch, we like pecans! Serve topped with fresh berries and to make it even more decadent, top with a drizzle of heavy cream.


Travelling Tacos - You buy individual sized Doritos or Fritos, crunch em up a little, cut them open & top with taco toppings! So easy and so good. My son chooses this every year for his birthday party meal, which is so easy to do!


Panko Chicken - I buy this premade at Costco for a quick, easy dinner. My kids LOVE this chicken and never complain, so it's also a win win. Pairing it with a baked pasta - I am going to include a recipe, however I will make my own alfredo sauce (similar to this link posted) and use a jar of my Carbone pasta sauce! YUM!
