Meal Plans for January 1 - 7

A week of meal plans for your convenience. These aren't always my own recipes, as I love to try others out and maybe even tweak them for my own spin. But I aim to have fairly easy, family friendly meals. A downloadable + printable PDF of plans are available below as well as links to all recipes.




Breakfast Sandwiches


Bagels, English Muffins, Biscuits or Croissants

Sausage patties or bacon

Scrambled or fried eggs

Colby Jack Cheese sliced


Cook up your sausage or bacon, then your eggs. Lightly toast your bagel or english muffin. Then assemble and enjoy! Wrap in parchment paper to freeze or keep in fridge for another day.



Banana Pancakes


3 ripe or overripe bananas

5 eggs

1 tsp baking powder

1 cup oatmeal


Place all ingredients in a blender and blend until smooth. Let batter sit for a few minutes as the oatmeal will thicken the batter over time. Thin with any milk of your choice if it's too thick. We like to stir in chia seeds and mini chocolate chips. '


Chocolate Chip Scones


2 cups unbleached all-purpose flour, plus more for dusting

3 tablespoons sugar, plus more for sprinkling

1 tablespoon baking powder

3/4 teaspoon kosher salt

6 tablespoons cold unsalted butter, cut into pieces

1 cup chocolate chips

1/3 cup heavy cream, plus more for brushing

2 large eggs


Preheat oven to 400 degrees. In the bowl of a food processor mix flour, sugar, baking powder, and salt. Pulse in cold butter until it's the size of peas.


In a small bowl, whisk together cream and eggs. Make a well in center of flour mixture. Add cream mixture; stir lightly with a fork just until dough comes together.


Turn dough out onto a floured surface and knead a few times to bring together. Pat into a 6-inch square, about 1 1/2 inches thick. Using a sharp knife dipped in flour, cut dough into four squares. Cut each square in half diagonally to form eight triangles. Transfer to a parchment-lined baking sheet. Brush tops with cream and sprinkle with more sugar.

Bake until tops are golden brown, 20 to 22 minutes. Let cool on sheet 5 minutes, then transfer scones to a wire rack and let cool completely.


Banana Muffins


1 1/4 cup wheat flour

1 tsp baking soda

pinch of salt

2 eggs, beaten

1/2 cup apple sauce (or neutral oil)

1 cup stevia (or regular sugar)

2-3 ripe bananas

chia seeds

mini chocolate chips


Preheat oven to 350 degrees. In a blender (I use my nutribullet) blend bananas, sugar, applesauce & eggs. In a bowl mix flour, baking soda and salt then stir in the wet ingredients. Add a tbsp or two of chia seeds for added protein and a heaping handful of mini chocolate chips. Bake for 20 minutes or until a toothpick comes out clean when poked in the center.


Roasted Potatoes


Cut up any kind of potato you prefer, we like yukon golds. Drizzle with olive oil, kosher salt & pepper. Roast at 425 for 30 minutes or until golden.


Beef Stroganoff


1 lb hamburger

1/4 cup flour

1 14.5 oz can beef broth

spoonful of beef base

1 tsp garlic salt

1/2 tsp onion powder

1/4 tsp black pepper

1/2 cup sour cream

grated parmesan cheese

cooked egg noodles 12 oz. bag


Brown your hamburger then stir in flour and cook for a couple minutes. Pour in beef broth and stir in a spoonful of beef base. Let simmer until it thickens. Then add seasonings and sour cream. Stir in egg noodles and serve topped with parmesan cheese.


**this is made without mushrooms because only half my family likes them... so I often cook them on the side for whoever wants them. I usually cook them in a mix of half butter, half olive oil. Season with garlic salt, pepper and a dash of soy sauce.


Asian Chicken Salad


Romaine, chopped

Purple Cabbage, shredded

Green Pepper, thinly sliced

Carrots, shredded

Mandarin Oranges

Shredded Roaster Chicken

Chow Mein Noodles


In a bowl, place your romaine lettuce then top with cabbage, green peppers, carrots, roaster chicken & mandarin oranges. Top with vinaigrette and chow mein noodles.


Asian Vinaigrette


1/3 cup olive oil

2 tbsp rice vinegar

1 tbsp soy sauce

1/2 tsp sesame oil

sqeeze of honey

salt + pepper


Place everthing in a jar and shake. Or whisk in a bowl.


Pizza Quesadillas


Tortillas

Shredded Cheese Blend

Mini pepperonis or cut up bigger ones into smaller pieces

Pizza Sauce

Butter


Top one tortilla with some shredded cheese, sprinkle pepperonis around and top with more cheese and another tortilla. Heat a chunk of butter on medium heat and then cook your quesadilla until golden on each side. Dip in pizza sauce.


Creamy Tomato Soup


28 oz can petite diced tomatoes

1 cup chicken broth

1 tbsp butter or vegan butter

spoonful of sugar

pinch of baking soda

1/2 tsp onion powder

1 1/2 cups cream or can of coconut milk


Place tomatoes, chicken broth, butter, sugar, baking soda and onion powder in a pot and simmer on low for at least an hour. OR place in your slow cooker on low all afternoon. Use an immersion blender to blend your soup smooth, or leave chunks if you'd like. Stir in cream and season with salt & pepper.
