A week of meal plans for your convenience. These aren't always my own recipes, as I love to try others out and maybe even tweak them for my own spin. But I aim to have fairly easy, family friendly meals. A downloadable + printable PDF of plans are available below as well as links to all recipes.
Waffles - We love to buy the premade Kodiak Waffles in the frozen section. They offer a few different flavors but chocolate chip and the cinnamon vanilla are two of our favs!
Banana Pancakes
3 ripe or overripe bananas
5 eggs
1 tsp baking powder
1 cup oatmeal
Place all ingredients in a blender and blend until smooth. Let batter sit for a few minutes as the oatmeal will thicken the batter over time. Thin with any milk of your choice if it's too thick. We like to stir in chia seeds and mini chocolate chips.
Banana Muffins - I make the muffin recipe on the back of the Kodiak pancake mixes, add in chia seeds & mini chocolate chips!
Instant Pot Hard Boiled Eggs - place eggs on trivet and pour in 1 cup of water. Cook on manual for 5 minutes with a quick release. Then immediately place in an ice bath. This cooks the yolk through, reduce time for a less "hard boiled" egg.
Air Fryer Potatoes - Chop potatoes and season with olive oil, garlic salt + pepper. Air fry at 400 for 15 minutes or until golden brown.
Air Fryer Broccoli - I will generously season chopped broccoli with avocado oil, garlic salt + pepper and air roast at 375 for about 8 minutes or until my desired liking, which is pretty done!
Air Fryer Brussel Sprouts - Toss in olive or avocado oil with garlic salt + pepper. Air fry at 400 degrees for 15 minutes or until desired doneness.
Jasmine Rice in the Instant Pot
2 cups jasmine rice
2 cups water
Spray your insert with oil, add in rice and water, stir & cook on manual for 4 minutes. Natural release for 10 minutes or more. Voila! The perfectly cooked white rice!
Ooni Pizza - my parents have an Ooni pizza oven that cooks pizzas in about 90 seconds. I make the dough (link below) and then we set out all the toppings and let everyone make their own pizza. So easy and good!
Homemade Biscuits
**I use Joanna Gaines' biscuit recipe but add kosher salt into the dough as well as sprinkling it on top. I like to mix it up the night before, refrigerate and then roll and bake in the morning.
4 cups self-rising flour, plus more for the work surface
2 tablespoons baking powder
1 teaspoon baking soda
1 tsp kosher salt + more for sprinkling
3/4 pound (3 sticks) salted butter, cold, cut into 1/2-inch pieces or grated
2 large eggs, beaten, plus 1 large egg for brushing
1 1/2 cups buttermilk, or as needed, plus 1 tablespoon for brushing
In the bowl of a food processor, mix together the flour, baking powder, and baking soda. Add the butter and pulse into the flour until the pieces are even and about the size of peas. Remove and pour into a large bowl.
Stir in the beaten eggs with a wooden spoon until combined. Stir in 1 1/2 cups buttermilk until the dough comes together into a sticky mass. If it is too dry, add more buttermilk 1 tablespoon at a time, mixing after each addition, until it reaches the correct consistency. Cover the bowl and refrigerate for at least 30 minutes and up to overnight.
Position a rack in the middle of the oven and preheat the oven to 400°F. Line a baking sheet with parchment paper.
Scrape the dough onto a floured work surface. Use your floured hands to press it into a round roughly 14 inches across and about 1/2-inch thick.
Use a floured 2 3/4-inch round cutter to cut out about 20 biscuits. If necessary, collect and pat out the scraps to cut more biscuits. You can use a drinking glass or mason jar to cut out your biscuits too if you don't have a cutter.
Transfer the biscuits to the prepared baking sheet line with parchment paper, arranging them so that they all are touching.
In a small dish, beat together the remaining egg and 1 tablespoon buttermilk. Brush the mixture on the top of the biscuits. Then sprinkle kosher salt on top.
Bake until golden brown, 15 to 20 minutes. Let cool slightly in the pan on a rack.
** if you don't have buttermilk on hand, you can make it! 1 cup milk + 1 tbsp lemon juice or white vinegar. Stir and let sit for 5 minutes.
Sausage Gravy
1 lb sausage
1/4 cup flour
4-6 cups milk
salt + pepper, we like to season with Lawry's Black Pepper Seasoning
In a large skillet, cook the sausage until browned. Then stir in flour to coat sausage and cook for 1-2 minutes. Then stir in milk and let it come to a simmer until thickened. Add more milk if necessary. Season with salt & pepper to taste. Enjoy!
Cornmeal Pancakes
1 cup flour
1 cup cornmeal
1/4 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups buttermilk
3 large eggs
1/2 cup butter, melted
Mix flour, cornmeal, sugar, baking powder, baking soda + salt in a bowl. Whisk in buttermilk, eggs and butter until smooth.
Over medium heat, grease your pan and cook pancakes, turning when they bubble up and bottoms are golden.
Egg Drop Soup
3 tablespoons cornstarch
2 teaspoons toasted sesame oil
1/2 tsp minced garlic
1 tbsp grated ginger
⅛ teaspoon ground white pepper
5 cups chicken stock
1 tablespoon rice wine vinegar
2 teaspoons reduced sodium soy sauce
4 eggs, lightly beaten
Heat sesame oil in a large stockpot or Dutch oven over medium heat.
Stir in garlic and ginger until fragrant, about 1 minute. Whisk in pepper,
chicken stock and cornstarch. Bring to a boil; reduce heat and simmer until broth thickens.
Stir in rice wine vinegar and soy sauce.
Gradually add eggs in a slow steady stream, stirring constantly. Cook until the eggs are set.
Burgers + Pork Chops - we tend to season all our grilled meats the same but it's so good! Just generously season them with Lawry's Black Pepper Seasoning and Smoked Paprika. That's it!
Asian BBQ'd Chicken with Rice + Fruit Salsa
Bachan's BBQ Sauce
Boneless, skinless chicken thighs
Jasmine Rice
Fruit such as pineapple, mango, peaches or nectarines - whatever is ripe at the store!
Cucumber
Red Pepper
Red Onion
Cilantro
Lime or Lemon Juice
Salt + Pepper
Marinate your chicken thighs in Bachan's BBQ sauce for at least an hour.
Meanwhile, cook your rice. I do mine in the instant pot. 1 cup rice to 1 cup water plus a small extra splash of water. Manual for 4 minutes with a 10 minute natural release. Turns out perfect everytime!
While all that's happening, prepare your "salsa". Chop fruit, cucumber, red pepper, red onion and cilantro. Combine in a bowl and squeeze a lemon or lime over and salt & pepper to taste.
Grill your chicken on medium high heat. Slice and serve over rice with your salsa! Drizzle extra Bachan's sauce on top too!
