A week of meal plans for your convenience. These aren't always my own recipes, as I love to try others out and maybe even tweak them for my own spin. But I aim to have fairly easy, family friendly meals. A downloadable + printable PDF of plans are available below as well as links to all recipes.
Keeping this week super simple since we have a lot going on! School is around the corner and I won't be living between our house and the lake house anymore so life will be slower and on a schedule! So we will get back into some more cooking from scratch!
I also ordered a sourdough kit - super excited to start learning how to make homemade sourdough bread!
Waffles - We love to buy the premade Kodiak Waffles in the frozen section. They offer a few different flavors but chocolate chip and the cinnamon vanilla are two of our favs!
Banana Pancakes
3 ripe or overripe bananas
5 eggs
1 tsp baking powder
1 cup oatmeal
Place all ingredients in a blender and blend until smooth. Let batter sit for a few minutes as the oatmeal will thicken the batter over time. Thin with any milk of your choice if it's too thick. We like to stir in chia seeds and mini chocolate chips.
Banana Muffins - I make the muffin recipe on the back of the Kodiak pancake mixes, add in chia seeds & mini chocolate chips!
Instant Pot Hard Boiled Eggs - place eggs on trivet and pour in 1 cup of water. Cook on manual for 5 minutes with a quick release. Then immediately place in an ice bath. This cooks the yolk through, reduce time for a less "hard boiled" egg.
Air Fryer Potatoes - Chop potatoes and season with olive oil, garlic salt + pepper. Air fry at 400 for 15 minutes or until golden brown.
Air Fryer Broccoli - I will generously season chopped broccoli with avocado oil, garlic salt + pepper and air roast at 375 for about 8 minutes or until my desired liking, which is pretty done!
Air Fryer Brussel Sprouts - Toss in olive or avocado oil with garlic salt + pepper. Air fry at 400 degrees for 15 minutes or until desired doneness.
Jasmine Rice in the Instant Pot
2 cups jasmine rice
2 cups water
Spray your insert with oil, add in rice and water, stir & cook on manual for 4 minutes. Natural release for 10 minutes or more. Voila! The perfectly cooked white rice!
Instant Pot Corn on the Cob
1 cup water
corn on the cob
Arrange corn on the trivet, pour in a cup of water and cook on manual for 2 or 3 minutes. Quick release.
Sloppy Joe's
1 1/2 lbs hamburger
1 8 oz can tomato sauce
1 tsp worcestershire
1 tsp liquid smoke
2 squeeze ketchup
1 tbsp tomato paste
1/4 cup brown sugar
1 tsp garlic salt
1/2 tsp pepper
1/2 tsp kosher salt
1 1/2 tsp chili powder
1 tsp onion powder
1 tsp dry mustard
Brown hamburger and remove fat. Stir in garlic salt, salt + pepper, chili powder, onion powder, dry mustard. Then pour in tomato sauce, Worcestershire, liquid smoke, ketchup, tomato paste and brown sugar. Bring to a simmer for 20 minutes or cook on low in crockpot all day.
I love to get brioche hamburger buns & fresh sliced provolone from the deli. Top one side of bun with provolone and toast in toaster oven or broil in oven until bread is lightly golden and cheese is melted!
We love to eat with plain, wavy potato chips. Scoop up any insides that fall out with them - so good!
Queso - Just use the recipe on the can of Rotel!
Block of Velveeta
2 cans Rotel - whatever spice level you prefer
Chop Velveeta and place everything into a microwave safe bowl and microwave in 1 minute increments until combined. Or throw in a crockpot on low and stir every 30 minutes or so.
Airfryer Pork Roast
My bestie, Briana says airfryer pork loin is the way to go. So this is her recipe we are trying out....
Pork loin
Avocado Oil
Brown Sugar
Smoked Paprika
Onion Powder
Garlic Salt
Cayenne
Dry Mustard
Season your pork loin generously with the above ingredients and air fry at 400 for about 20 minutes or until your liking. Pork should be cooked to at least 145 degrees in the center.
Spaghetti Sauce
1 lb hamburger
1 28 oz can crushed tomatoes
1 14.5 oz can tomato sauce
1 6 oz can tomato paste
1 tsp minced garlic
1 tsp oregano
1 tsp basil
1 tsp thyme
1/2 tsp onion powder
1 tsp garlic salt
1/4 tsp black pepper
1 tbsp balsamic vinegar
Brown hamburger and remove excess fat. On medium heat, stir in garlic, oregano, basil, thyme, onion powder, garlic salt + pepper. Cook for a couple minutes until fragrant. Then add in crushed tomatoes, tomato sauce + tomato paste. Bring to a simmer and stir in balsamic vinegar. Simmer for 20 minutes.
You can also just put cooked + seasoned meat in the crockpot and stir in everything else and cook on low all afternoon, this is actually my favorite way to have it. Let those flavors marinade and that meat get nice and tender!
If you're feeling extra, pour a splash of heavy cream into your sauce for added richness!
Cheesy Ramen
Ramen - any flavor, my kids prefer chicken
2 Kraft Singles Cheese Squares
Cook ramen, drain water leaving just a small amount and pour in seasoning packet and stir. Then tear up cheese and stir in until melted!
