A week of meal plans for your convenience. These aren't always my own recipes, as I love to try others out and maybe even tweak them for my own spin. But I aim to have fairly easy, family friendly meals. A downloadable + printable PDF of plans are available below as well as links to all recipes.
This is my busiest time of year. Travelling for hockey and tax season... so lots of breakfasts at the rink and pizza at the pool!
This week is super busy - we are in the middle of a home remodel, extra hockey practices and games, sick kiddos, etc. So super easy meals! In a monthish, I can't wait to get back in the kitchen and cook real meals every night at a decent hour... bear with me in the meantime!
Waffles - We love to buy the premade Kodiak Waffles in the frozen section. They offer a few different flavors but chocolate chip and the cinnamon vanilla are two of our favs!
Banana Pancakes
3 ripe or overripe bananas
5 eggs
1 tsp baking powder
1 cup oatmeal
Place all ingredients in a blender and blend until smooth. Let batter sit for a few minutes as the oatmeal will thicken the batter over time. Thin with any milk of your choice if it's too thick. We like to stir in chia seeds and mini chocolate chips.
Banana Muffins - I make the muffin recipe on the back of the Kodiak pancake mixes, add in chia seeds & mini chocolate chips!
Instant Pot Hard Boiled Eggs - place eggs on trivet and pour in 1 cup of water. Cook on manual for 5 minutes with a quick release. Then immediately place in an ice bath. This cooks the yolk through, reduce time for a less "hard boiled" egg.
Creamy Chicken & Rice Soup
roaster chicken, chopped up
1 cup rice, cooked
6 Cups Chicken Broth
1/2 cup heavy cream
small onion, diced
celery, diced
carrots, chopped
1 tbsp minced garlic
salt + pepper, to taste
1 tsp oregano
1 tsp parsley
1 tsp garlic salt
olive oil
Pour a drizzle of olive oil in a large pot over medium to medium-high heat. Add onion, celery, garlic and carrots. Cook for about 5 minutes then add in oregano, parsley, salt + pepper. Pour in chicken broth and bring to a boil. Add in chicken, rice and season to taste with salt + pepper plus garlic salt. Simmer until veggies are fork tender. Turn down the heat and stir in the cream. Enjoy!
**sub cream with coconut milk or leave out - it's delicious as just a regular clear broth soup too!
Pizza - sometimes we order it, sometimes it's frozen or sometimes we make it! I like to make it lots of different ways... pickup canned or frozen dough.... use premade crusts from the store. Naan is a great crust too. French bread is a fun way to switch it up too! My favorite frozen pizzas are the Detroit Style pizzas from Costco or Wild Mike's Uncured Pepperoni pizza! Top with fresh grated parmesan and hot honey - dunked in a little ranch... **chefs kiss!
