A week of meal plans for your convenience. These aren't always my own recipes, as I love to try others out and maybe even tweak them for my own spin. But I aim to have fairly easy, family friendly meals. A downloadable + printable PDF of plans are available below as well as links to all recipes.
This is the beginning of my busiest time of year. Travelling for hockey and tax season... so lots of breakfasts at the rink and pizza at the pool!
Waffles - We love to buy the premade Kodiak Waffles in the frozen section. They offer a few different flavors but chocolate chip and the cinnamon vanilla are two of our favs!
Homemade Granola
1/2 cup coconut oil, melted
1/2 cup honey
1/2 tsp cinnamon
1/2 tsp salt
3 heaping cups old fashioned oats
2 Tbsp chia seeds
2-3 Tbsp maple syrup
1 tbsp vanilla
Preheat oven to 300 and line a rimmed baking sheet with parchment paper.
Whisk honey, oil, salt and cinnamon. Stir in oats and chia seeds. You can add a cup of nuts too if you’d like as well as any other seeds. Then stir in maple and vanilla. Spread on parchment paper and bake for 10 min at 300. Stir and bake for an additional 12 minutes at 325 degrees. Remove from oven, give a good stir and let cool. Break up into pieces and let cool completely. Store in airtight container for up to a month.
Banana Pancakes
3 ripe or overripe bananas
5 eggs
1 tsp baking powder
1 cup oatmeal
Place all ingredients in a blender and blend until smooth. Let batter sit for a few minutes as the oatmeal will thicken the batter over time. Thin with any milk of your choice if it's too thick. We like to stir in chia seeds and mini chocolate chips.
Banana Muffins - I make the muffin recipe on the back of the Kodiak pancake mixes, add in chia seeds & mini chocolate chips!
Jasmine Rice in the Instant Pot
1 1/2 cups jasmine rice
1 1/2 cups water
Spray your insert with oil, add in rice and water, stir & cook on manual for 4 minutes. Natural release for 10 minutes or more. Voila! The perfectly cooked white rice!
Chicken Lazone
1 lb chicken breasts, thighs or tenders
4 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried basil
Kosher salt and black pepper
1 pound long pasta, such as linguine or fettuccine
1 tsp minced garlic
2 cups heavy cream or half & half
1/2 cup grated parmesan cheese
4 tbsp butter, 2 tbsp for chicken & 2 tbsp for sauce
Combine smoked paprika, garlic + onion powder, cayenne pepper, oregano, basil, salt + pepper to a gallon ziploc bag and shake to mix. Add chicken and shake to coat.
Boil a large pot of water and cook pasta according to package directions. Reserve some pasta water for sauce.
Melt 2 tbsp butter in a skillet, add chicken and cook about 5 minutes per side until cooked through. Set aside on a plate and cover with foil to keep warm.
Melt 2 tbsp butter in the pan, add garlic and cook until fragrant. Whisk in cream and bring to a simmer, add parmesan cheese in two batches, bringing to boil each time and stirring until cheese has melted in. Add some reserved pasta water as needed if sauce becomes too thick.
Add pasta into pan sauce and toss to coat. Serve topped with chicken!
Taco Bowls
Taco meat - hamburger or chicken
Cooked rice - white rice or I love Vigos Yellow Rice
Corn Salad
Chopped Lettuce
Chopped Onion
Chopped Tomatos
Sour Cream
Salsa
Avocados or Guacamole
Candied Jalapenos
Cilantro
Tajin
You can customize these however you want. but essentially put down rice and top with taco meat and any toppings you like. Stir and enjoy!
Corn Salad
Frozen, white sweet corn
Red onion, diced
Pepper, diced (any kind you'd like - I use whatever color looks best at the store)
minced garlic
feta or cotija cheese
lime
olive oil
salt + pepper
tajin
On medium high heat, cook your peppers and onions. Let them sit so they get a nice char on them. Then shake/stir them around and add minced garlic, to taste. Then pour in bag of frozen corn and cook for a couple minutes. Then squeeze fresh lime juice over. Season with salt + pepper. Then once corn is hot, turn off your heat and top with crumbled feta or cotija cheese just before serving as well as a generous sprinkle of tajin seasoning.
*this salad is so good as a side, a dip with chips, in taco or burrito bowls, on your taco or burrito - anything. You will love it, it's addicting!
Mandarin Orange Chicken - I order this from my local Alison's Pantry consultant. It's quick, easy and so good!
Steak Ramen - We buy the "fancier" version of ramen noodles at our grocery store and then add in grilled, sliced flat iron steak, a soft boiled egg and green onions. So easy and good!
Chicken Wraps - I buy the hand breaded chicken strips at our local grocery store and come home, slice them up and we put them in tortillas with lettuce, any veggies we like and ranch. I like to add some truffle hot sauce to mine too. Cabbage is also delicious instead of lettuce. Or buy a salad kit like the asian vinaigrette or southwestern ones and add in chopped chicken and wrap it up in a tortilla.
